Salted caramel is a whole big thing. Apparently plain old regular caramel is boring now and we all need multi-layered flavor juxtapositions to be OK with life. Which frankly works for me, except that caramel is basically never vegan so I am mostly just tortured by daily promises of salty-sweet joy. UNTIL NOW.
In a flash of weekend inspiration, I decided to make apple pop-tarts because fall is totally coming. This presented the perfect opportunity to get on this whole salted caramel train. There were no recipes that I could find for vegan salted caramel apple pop-tarts, so I made this one up. Judging from the fast disappearing act they’re pulling, I think we can count this one a success. Maybe the cool kids will invite me to their lunch table now.
