Miniature things are so much cooler than their full-sized counterparts. Don’t you think? Though the fact that I’m only 5’2″ might make me somewhat biased. Whether you agree or not, bite sized foods are infinitely more party worthy than anything that has to be cut, spooned or otherwise served and portioned. And I’m basically convinced that any recipe can be made in miniature, thanks to the invention of the mini-muffin tin.
Case in point are these delightful peach pielets I made for a party this weekend. The recipe I used came from Vegan Pie in the Sky (Basil Peach Pie and Buttery Double Crust) but you could basically use any pie recipe you like. I doubled the recipe for the dough, but made only a single filling recipe, as the dough to filling ratio will be higher in the small versions. It made 60 pielets.
