When did zoodles get so trendy? Presumably around the time that wheat pasta became so last year.
Anyhoo, I’ve been super curious to make them, mostly because how cool is a noodle made out of a zucchini? Also they just straight up seemed like one of those things that is super easy to do and secretly hides vitamins and nutrition in the form of comfort food. Midway through making this completely yummy pad thai recipe from The First Mess on Design Sponge, I remembered that julienning anything by hand is actually super labor intensive. Well worth it though. This was fresh, light, delicious…and as a bonus I get to say zoodle a lot.
Oh, P.S. I made this with edamame instead of peas, because protein.
