My entire Instagram feed is full of aspirational healthy cooks who apparently start each and every morning with green smoothies. For the life of me, I cannot want frozen vegetables first thing in the morning. So I was very happy to discover that there is this magical thing called a BREAKFAST COOKIE. Let’s review: it’s breakfast, in a cookie. And I can be just as smug as the smoothie people, because they are chock full of protein, fruit, grains, even vegetables! And most don’t have any added or refined sugar. I win. My body wins. Everyone wins.
