My grandmother made pie. Really, really, really good pie. I learned to cook by watching and helping her make pie. It’s been my forever favorite thing to create.
Y’all, making vegan pie is HARD. Solid fats are really important to creating pastry dough, and kind of the whole point of being vegan is to avoid the kinds of fats that sit solidly in your arteries.
This vegan coconut cream pie was my first ever vegan pie. It was fine–I didn’t get the coconut smooth enough. I cooked the crust too long. Dozens and dozens of pies later, I think I’ve finally got the hang of vegan pastry, but this first patriotic vegan pie is always going to hold a special place in my heart.
